For a lot of aspiring bakers their first foray into the baking arts comes in the form of a very tasty cookie that has almost universal appeal.
The reason for that is simple: baking a pan of peanut butter cookies is easy. All you really need is some peanut butter, a workable oven and a few other ingredients.
Since today (June 12) is National Peanut Butter Cookie Day I felt it was appropriate to offer a recipe that is easy and almost foolproof.
The only thing hard about this recipe is waiting for them to cool enough before eating them. Trust me on this.
Peanut Butter Cookies
Makes 2 dozen
1 cup sugar, plus ¼ cup morel to roll cookies
1 stick butter, room temperature
1 cup smooth peanut butter
1 teaspoon vanilla
½ teaspoon salt
½ teaspoon baking soda
1½ cups flour
Preheat oven to 375 degrees.
Grease a baking sheet. In a large bowl, cream together sugar and butter. Beat in egg to mixture. Mix in peanut butter and vanilla until smooth and creamy.
Stir in salt, baking soda and flour until well combined. Roll dough into 1 inch balls and then roll in sugar. Place on baking sheet and flatten with fork. Bake for 12-15 minutes.
