Every host fears one thing over all else on Thanksgiving. No, it’s not gluey mashed potatoes, or soggy stuffing, or even a dry, overcooked turkey. It’s running out of food! As a result of this fear, almost everyone overcooks for the main event resulting in absurd amounts of leftovers.
Thanksgiving leftovers aren’t regular leftovers, they’re *cool* leftovers. Regular leftovers get pushed to the back of the fridge, Thanksgiving leftovers (at least in my house) get integrated into every meal following the main event until every Tupperware is scraped clean. They’re the Lebron James of leftovers, they’re the Michael Jackson of leftovers, they’re… well you get the picture.
These egg rolls are the perfect way to utilize your prized leftovers. Like any good post-feast creation, they utilize as many ingredients as possible. These egg rolls are stuffed to the brim with mashed potatoes, cranberries, turkey and stuffing. When shallow fried in veggie oil, the ingredients are evenly reheated and begin to meld just the way Thanksgiving god intended them to. They’re creamy, salty, sweet and crunchy, and when they’re dipped in gravy, they give the OG meal a run for it’s money.
